Everything Keto Crackers
with StarCatcher's gourmet herbal blend: EVERYTHING
5 1/2 tablespoons unsalted butter
1 cup almond flour
1 teaspoon xanthum gum
1/2 teaspoon baking powder
salt to taste (suggestion: 1/2 tsp)
4 rounded tablespoons StarCatcher's Saratoga Herb EVERYTHING blend
Preheat oven to 350 degrees.
Melt butter over low heat (be sure not to brown). Set aside
Blend almond flour, xanthum gum, baking powder, salt, and EVERYTHING blend.
Add butter and mix well.
Whisk egg and add to dough, blending in while making dough into a ball. (Add a sprinkle or two of almond flour if dough is not firm enough to roll into a ball)
Place dough ball in bowl and cover with a cloth. Place in freezer 5 minutes to firm up butter.
Remove from freezer and place the dough between two sheets of parchment paper and roll out dough to nickel thickness. Cut out into desired sized squares or rectangles (suggestion: 1.5 inch squares)
Use a spatula to lift crackers from parchment and place on a parchment lined cookie sheet.
Bake 8-12 minutes. If you have access to a convection oven the crackers turn out evenly baked and with a nice "snap" when broken into two.
Feel free to experiment with thickness, size, and crispness (added crispness: let cool after baked to golden brown and return to oven for 5 minutes)
